
I get really sentimental when it comes to holidays, especially ones like Pioneer Day. I had many family members leave Europe to trek across the Great Plains of America to come to Utah. Some family members died along the way and those that made it were sent to Idaho and parts of Utah. I am so grateful for their faith, sacrifices, and determination.
Erick and I started the day off going to breakfast and then over to his mom's house. We were in charge of making ice cream for the evening festivities and so we began our 5 hour task. We made cherry chocolate (diabetic version), lemon-raspberry, and banana-mango. They all turned out to be very yummy. While we made ice cream, we watched the Days of '47 Parade on TV and spent time talking with Erick's family.

We went down to Aunt Kathy's in Salt Lake City to have dinner and watch the fireworks near Liberty Park. It was so much fun - we walked around Liberty Park for a couple of hours to ride rides, walk through the Aviary, and see some of the booths. The fireworks we lit were fun but a bit loud and explosive (we bought some we thought were pretty benign!) and the City's fireworks were awesome.

We had a great day and it was fun to celebrate with family and I am looking forward to it again next year!
